Genièvre berries have the same taste as the scent of a coniferous forest. The ripe and dried juniper berries resemble perfume and a little taste with pink berries. Unfortunately, the particular aroma of juniper berries evaporates very quickly, which is why it is advisable to crush or pound them - preferably in a mortar - shortly before their use. Its 'berries' as its fruits are called, are in fact cones, whose upper leaves covered with scales become fleshy by ripening.
